href="http://lesswendy.org" target="_blank">Wendy</a> and I are just over three hours away from Chicago (if all goes as planned; I’m actually writing this on Thursday (yesterday) evening) assuming we’ve not hit any snags.</p><p>In reality, it’s actually just a mini-vacation as it’s only a couple days but Wendy and I are taking in some much needed us-time.</p><p>We have plans to visit <a
href="http://www.sheddaquarium.org/" target="_blank">Shedd Aquarium</a>, the <a
href="http://www.fieldmuseum.org/" target="_blank">Field Museum</a>, <a
href="http://www.navypier.com/" target="_blank">Navy Pier</a> and <a
href="http://www.searstower.com/" target="_blank">Sears Tower</a> (at night) so we’ve got plenty to do.</p><p>However, you can keep up with us if you like. How?</p><ul><li><a

So, we have plenty of leftover breaded chicken [...]]]></description> <content:encoded><![CDATA[<p>Long story short, we got Chinese takeout last night, my wife wasn&#8217;t home at the time but I got her some Sweet and Sour pork, she got home and ate Kelsie&#8217;s General Tso&#8217;s on accident. She also poured the remaining sweet and sour sauce on the Tso&#8217;s. So, we have plenty of leftover breaded chicken but no sauce.</p><p>Kelsie&#8217;s hungry, so I look up a sweet and sour sauce recipe in Google and find this:</p><blockquote><p>2 tbsp. cornstarch<br
/>1/2 c. sugar<br
/>1/4 c. white vinegar<br
/>1/4 c. pineapple juice<br
/>2 tsp. soy sauce<br
/>1/4 c. water</p></blockquote><p>We didn&#8217;t have any cornstarch, so we replaced it with 1 tbsp. flour and whisked it real good, heating the mixture on medium just until it started to boil, then we removed it from heat.</p><p>I&#8217;m posting because I can&#8217;t believe how good this simple recipe is! I&#8217;m saying this is fantastic sauce! While it was warming it smelled a little vinegar-y but it turned out fantastic. Next time you make home made sweet and sour sauce, give this little recipe a shot. The recipe above made enough for about two servings.</p><p><img

Click the image to see the full set.</p><p>Dad and I had chinese at the local buffet (we didn&#8217;t eat like it was a buffet; it&#8217;s just that the take out place is sloooow) where we talked about a bunch of different stuff. Then, we closed with our favorite chinese buffet dessert. One cup of vanilla ice cream, another full of Fanta orange. Mix to make a&nbsp;scrumptious impromptu orange dreamsicle-like substance. It&#8217;s oh-so-delish!</p><p>My wife also picked me up a new Starbucks coffee mug (that looks like their paper cups) plus some chocolate covered espresso beans. All in all, a fantastic Father&#8217;s Day.</p><p>Oh yeah&#8230; <a

When my wife snores, it doesn&#8217;t really bother me. I can usually sleep through it (quite often I&#8217;ve fallen asleep to her little rumbles) as she&#8217;s not a chainsaw snorer. Her snores are usually more what you&#8217;d think a sleepy Pekinese would sound like.</p><p>Except for Tuesday night. Wendy was feeling pretty terrible Tuesday night, and after eating Christmas dinner leftovers at Mom and Dad&#8217;s I brought her home, and she immediately grabbed a blanket and fell asleep on the couch.</p><p>I was doing my thing around the house when I heard something louder than a Pekinese snoring coming from the couch. I went into the living room and found Wendy seriously sawing logs. Loud. I finally had the opportunity to prove to her that she did, in fact, snore.</p><p>So, I recorded it.</p><p>My cell phone has a voice recorder dealio built in, so I enabled it and held my phone right next to her face. The light from the inside screen was pretty bright, so I had to lean over the couch all contorted to be sure she didn&#8217;t wake from me recording her non-snoring.</p><p>Of course, I had to gloat after she woke up and let her listen to herself. While she didn&#8217;t outright deny it, I still think she&#8217;s skeptical. She did ask later in the evening, &#8220;was that really me?&#8221;</p><p>Yes, Wendy. That was really you.</p><p>I&#8217;ll try to get the audio moved to MP3 and posted here for your enjoyment this weekend. :)</p><p><img
